
Ingredients
- Olive oil
- Puff pastry
- Free from pesto (I use Sacla’ free from pesto)
- 4 large tomatoes
- 2 teaspoons of mixed herbs
- A pinch of Himalayan pink salt
Method
- Preheat the oven to Gas Mark 6
- Lightly oil a baking tray
- Lay out the puff pastry. If you are making the pastry yourself, you will need to stick to the dimensions 350mm x 225mm
- Thinly cut the vertical edges off and place back on top to create a border
- Prick the centre of the tart, excluding the border
- Spoon a thin layer of pesto in the centre of the tart
- Place the sliced tomato in rows
- Top with some mixed herbs and a pinch of salt
- Place in the oven for 15-20 minutes, until the edges have puffed up

What made you want to become vegan?
Initially, it was for dietary reasons. I'd suffered from bloating and decided to give up dairy, which helped me so much. Then I heard of Veganuary, so I took part in 2017 and I have never looked back.
Was the transition hard for you?
For someone who was a massive fan of beef burgers, cheese on everything and milkshakes you would surely think so, but it was surprisingly easy. There are so many resources now with useful information, lots of recipe books and amazing brands bringing out a wide scope of different products, making a vegan diet very easy.
Why do you think veganism is becoming popular?
I think people are realising the massive impact farming has on the environment, which is a very scary thought. Also, making that connection between an animal and what is on their plate. Veganism is getting so much easier as there are so many great replacements. For example, vegan cheese is really good now and meat substitutes have flavour, so replicating your favourite meals is possible.
What foods are always included in your weekly diet?
I love stir fry, so lots of veggies and tofu. Chickpeas and coconut milk for making curries, fruit for smoothies, tahini for making salad dressings and nuts for snacking on too.
How would you encourage others to try the vegan diet?
I would say don't be pressured. Take your time, look up some yummy recipes online, go along to vegan markets and events. I highly recommend Surrey Vegan Market which is a monthly event in Walton or Vegfest to go and experience some amazing, innovative food. Don't make the mistake of eating boring, plain salads because you think that's all you can have. Follow some vegan food accounts on Instagram for inspiration and have a chat with amazing vegan communities.
Favourite vegan dish?
At the moment it is buffalo cauliflower wings with lots of spicy peanut sauce - Heaven!
