
Self-saucing Chocolate Pudding
Here’s the recipe for a super-easy & yummy pudding from Sassy Stirrers. It can be made ahead of time and gently re-heated. Enjoy!
Ingredients:
- 60g butter
- 1 1/2cups self raising flour
- 2/3 cup sugar
- 1/4 cup cocoa
- 3/4 cup milk
- 2 tsp vanilla
- 3/4 cup brown sugar
- 1/3 cup cocoa – extra
- 2 cups boiling water
Method:
Place the butter in the pudding bowl & put into the microwave for about 1 minute until it is melted.
Carefully take out of the microwave & sift in the flour, cocoa & sugar.
Add the milk & vanilla & mix until it is nice & smooth with a wooden spoon.
Put the boiling water in a measuring jug & mix in the extra sugar & cocoa, now carefully pour this over the mixture.
Cook in the microwave & cook on high (800w) for 10 minutes approx. or 180C (fanbake) for approximately 35 minutes. It is ready when the mixture springs back when you gently poke it!
Once cooked, allow it stand for 5 minutes, and then enjoy it by itself, or with ice cream, yoghurt, cream or crème fraiche! Yummy!
This serves 6 – plenty to share with your family & friends!
Tip:
Just mix the flour mixture until it is combined otherwise it won’t rise as well.
To make individual puddings, grease muffin tins & divide & fill each tin to just under 1/2 full, then gently pour over 2 tablespoons of mixture & cook in a hot oven (180C) for 18 minutes.
For an extra especially rich pudding, add about 1/2 cup chopped chocolate chips to the mixture.
