The Victoria, located in Oxshott, Surrey, is set to welcome revered chef Jitin Joshi for a two-night takeover on 21st April and 22nd April 2022. With a career spanning nearly over 2 decades, in eight countries in various operations, Joshi is undoubtedly one of the most versatile chefs from India today.
Having trained at the renowned Oberoi School in Delhi, Joshi began his culinary career in Jaipur before making the move to London, working in several esteemed establishments including The Capital Hotel, Gordon Ramsay’s Maze, and Benares, before relocating to Dubai, taking positions in Armani Hotel and the highest restaurant in the world - Burji Khalifa. Most recently, he has been behind pop-up restaurants and guest chef series at London’s Carousel, The Greyfrair in Hampshire, the Internationally renowned Jubilee Gastronomy restaurant concept at the Dubai Expo and after The Victoria Oxshott, he will be involved with the Yas Marina where the Grand Prix takes place in Abu Dhabi.
Joshi’s passion for ingredients, technique, and the planet, is the inspiration behind the menu at The Victoria Oxshott this April.
Guests will enjoy a 6-course menu and will begin with puffed wild rice bhel and avocado or Salmon Chaatlet, followed by Torched scallops, Kerala coconut sauce and pickled chilli. Larger plates will come in the form of Curry leaf mackerel and burnt tomato relish; Charred venison kebabs, pickled mooli and basil chutney; and spiced rubbed wagyu short rib and turmeric-mustard potato, Gulabjamun brioche pudding with rasmalai custard and peanut ice cream completes the menu.
